What are the current opportunities in organic dairy and eggs?

Key opportunities to invest in organic dairy and eggs in the Midwest center on scaling animal systems and feed supply to replace imports and meet fast-growing demand for organic animal products. With the region already leading national production of organic milk and eggs and serving as a backbone supplier of grains and pasture, strategic investment in organic feed grains, milk processing and bottling, pasture-based livestock systems, and regional buyer connections can keep more value local while improving farm profitability and strengthening the national organic supply.

Organic Vegetables & Fruit

What are the most profitable organic vegetables and fruits to grow?

For organic producers in Wisconsin, high-value fruits and vegetables tend to be those that combine strong regional demand with relatively limited local organic supply, short seasons, or suitability for season extension. This often includes organic berries (especially strawberries and raspberries), diverse salad and cooking greens, and high-demand fresh-market crops like tomatoes, sweet peppers, carrots, and specialty root crops, which can command premium prices in CSA, farmers’ markets, and direct-to-retail channels when grown with good timing and consistent quality.

The Wisconsin Organic Advisory Council (OAC) was established in response to recommendations by the 2004 Governor's Task Force on Organic Agriculture. The group first met in February 2006. A cooperating Interagency Team composed of representatives of major state and federal agriculture agencies meets with the Council.

Purpose: The purpose of the OAC is to provide guidance and insight to the Secretary of Agriculture, the Governor, the Legislature, and other state agencies on actions that can be taken to further the Wisconsin organic industry.

Meetings: The Council meets 6 times a year to discuss emerging issues and opportunities in the Wisconsin organic industry, identify gaps and needs, and advise the DATCP Secretary.
